Don’t be tempted to interchange cilantro and coriander. Whilst they do come from the same parsley family, they don’t all get along. Coriander enjoys pairing itself with spices like cumin, cardamom and other non-controversial flavors. The same can’t be said about cilantro. Either you adore it, or it tastes like soap. If you like some crunch on your garnish then whole coriander will also be one of your best friends in the kitchen. Or, you’ll take the ole’ mortar and pestle and grind them down to powder to add to spice rubs, proteins and roasted vegetables. It seems that, the Brits refer to the seed, stalk and leaves of cilantro, as coriander. Don’t get at a loss for words. It is a dry delicious seed and not a green leafy herb.
